Protoreaster nodosusstarfish or also called horned starfish are animals that enter the phylum Echinoderms. This study aims to examine the nutrients contained in Protoreaster nodosusby looking at three parameters namely proximate, amino acids and fatty acids. The test method refers to SNI 1992 (proximate), AACC 1994 (amino acid), and AOC 1984 (fatty acid). Proximate analysis results on Protoreaster nodosusgave values of water (50.40%), ash (33.60%), protein (9.19%), fat (0.50%), and carbohydrate (6.31% ). The results of amino acid analysis on the highest third-order Protoreaster nodosusare glutamic acid (2.45%), aspartic acid (1.08%), and leucine (1.05%). The results of the analysis of fatty acids in the highest third-order Protoreaster nodosuswere palmitic acid (0.14%), stearic acid (0.07%), and linolenic acid (0.07%).
