This research aims to determine the dose of the administration of the enzyme papain in increasing feed efficiency and growth of grouper Epinephelus fuscoguttatus x Epinephelus lanceolatus. This research was conducted in October 2019 for 42 days in the Household Scale Hatchery of the Marin Agri Sejahtera Cooperative, Tanjungpinang City, Riau Islands. Completely randomized design (CRD) with 4 treatments and 3 replications where K treatment (without adding papain enzyme dose), A treatment (papain enzyme dose 2.75%), B treatment (papain enzyme dose 3.75%), C treatment (papain enzyme dose 4.75%). The results research of statistical analysis, addition of papain enzyme of papain enzyme doses shows a significant effect (P<0.05). The best dose was obtained in treatment A adding papain enzyme 2.75% the results obtained on the, feed efficiency (69.66 ±1.32%), feed conversion ratio (1.46 ± 0.05) and absolute weight growth parameters were (18.47±0.03 g).
